The Hazleton Kitchen Incubator is thrilled to welcome Jack’s Small Batch BBQ, LLC, a family-owned barbecue company led by brothers John and Brian Polgrean. Known for their Texas-style brisket, pulled pork, and ribs, Jack’s Small Batch BBQ is a new venture inspired by the Polgreans’ passion for cooking and their success in steak cooking competitions. The company, which will serve Greater Hazleton, Jim Thorpe, Lehighton, and surrounding areas, takes pride in their small-batch, handcrafted barbecue.
Jack’s Small Batch BBQ was born out of a steak cooking competition team, placing in numerous events and qualifying for the Steak Cookoff Association World Championship in Fort Worth, Texas, on multiple occasions. They then expanded into catering, cooking at functions for their family and friends.
The Polgrean brothers, both Hazleton natives, chose the Greater Hazleton area to launch their business because of the invaluable support and resources offered by the Kitchen Incubator. The incubator provides them with access to a fully licensed, professional kitchen and support navigating regulatory requirements, which enables them to grow their business while balancing full-time jobs.

Brian Polgrean shared that the Kitchen Incubator’s flexibility and support made it an ideal location for Jack’s Small Batch BBQ.
“We found the Kitchen Incubator while searching for a commissary kitchen online, and it’s been the perfect space for us to expand our offerings. Nico Makuta and John Carsia have been incredibly helpful, guiding us through the process and helping us navigate regulatory requirements,” he said.
For the Polgrean brothers, joining the incubator marks a new chapter in their barbecue journey, which began with cooking for friends and family gatherings. As they look ahead, their goal is to grow Jack’s Small Batch BBQ gradually, taking full advantage of the incubator’s resources and support network to bring their barbecue creations to a wider audience.
